Exile and Discovery in America

Indeed, he took the stage as first violinist in America's only professional orchestra at the John Street Theatre in New York. His time there was marked by lively experiences, from hunting a wild turkey that he found 'charming to behold, pleasing to smell, and delicious to taste,' to a memorable drinking contest where he and two fellow French émigrés bested a pair of Englishmen in a spirited night of claret, port, and punch.

When the political climate in France softened, Brillat-Savarin returned in 1796. He resumed his legal career with distinction, rising to the supreme court of appeal, the Tribunal de cassation. He was even honored by Napoleon with the Legion of Honour.

A Judge, Musician, and Gourmand

Despite his return to a prestigious judicial life, his passion for music never waned; he later owned a Stradivarius and continued to perform for friends. His Paris home became known for its exquisite dinners, sometimes graced by his beautiful cousin, Juliette Récamier. For her, he held deep affection, penning a dedication in his masterpiece that spoke of 'sentiments which have at all times attached me to you.'

For years, between his judicial duties, he meticulously crafted his culinary observations and reflections. This was his Physiologie du goût, a book born of countless hours, rich with his gastronomic memories and philosophical insights.

The Enduring "Physiology of Taste"

Published anonymously just weeks before his death in 1826, its true authorship quickly became an open secret. The work cemented his place as a founder of the gastronomic essay, filled with aphorisms like 'Animals feed: man eats: only the man of intellect knows how to eat.'

The book delights with its meditations on taste, appetite, and digestion, and includes charming miscellanea. Readers still encounter stories like the bishop's mischievous wooden asparagus trick, nestled among the author's own recollections of exile. It was immediately popular, translated into English, German, and many other languages, keeping his insights alive for generations of food lovers.

Jean Anthelme Brillat-Savarin, who died at seventy after contracting pneumonia, left behind not just a respected legal career, but a timeless invitation to savor the pleasures of the table, one meal at a time.
